Wayne Moore

Wayne Moore, Ph.D. is a consulting food scientist / cereal chemist with experience in food-ingredient development, food manufacturing systems and quality systems. Wayne received BS and MS degrees in Biology and Food Science from Kansas State University. Following eight-years of industrial experience, he returned to KSU for his Ph.D. in Cereal Chemistry.

His industrial experience includes Protein Technologies International (Research Manager), Anheuser-Busch (Research Manager), ConAgra (Director of Research and Laboratory Services), and Miller Milling (Director of Quality). Wayne also held the position of Associate Professor in the Department of Cereal Science at North Dakota State University teaching cereal science courses, directing the hard red spring wheat laboratory and providing services to North Dakota’s stakeholders. He has made numerous presentations to both domestic and international audiences on wheat quality and end use applications. He has authored or co-authored twenty referred journal articles and numerous technical bulletins, and is an inventor / co-inventor on three US patents.

For the past fifteen years, Wayne has consulted with a range of clients from small, start-up entities to non-profit organizations to Fortune 500 companies. Topics include raw material quality, flour milling quality programs, wheat flour utilization, soy and other proteins in food systems, mineral and micronutrient fortification, and by-product utilization. He has also been an expert witness in six legal actions. He provides client training in ingredient and cereal technology and provides data mining, statistical process control for food processing operations, and quality systems for quality laboratories.

Wayne is a forty-year plus member of AACC International and IFT having served both organizations in capacities ranging from technical committee membership/chair to Section or Division chairs; he is a past chair of the Florida Section IFT and has been committee chair for the Section’s Supplier’s Night Activities. Wayne is also a current member of AOAC International and of the Wheat Quality Council.
